Ingredients
- 2 cups of parboiled rice (1000 naira)
- Suya beef (1000 naira)
- Sachet of Ginger and Garlic powder (100 naira)
- 1 Onion (100 naira)
- Vegetable oil (500 naira)
- Fresh tomatoes and pepper-Chopped (500 naira)
- 2 seasoning cubes (100 naira)
- Mixed vegetables- Green and red bell peppers, carrots, green peas and green onions (Optional)
- Sachets of Curry and Thyme powder (200 naira)
- Salt to taste
Preparation
- In a cooking pan add some oil and allow to heat up then throw in the chopped onion and stir fry for 2-3 minutes.
- Add the garlic and ginger powder to the frying mix before adding the Suya.
- Ask the seller for extra yagi pepper as it not only packs heat but also a ton of flavor.
- Allow everything to cook for about 5 minutes while stirring before adding the chopped tomatoes and pepper. Add a generous amount of curry and thyme powder and the seasoning cubes.
- While the sauce is cooking, parboil the rice by adding it to a clean pot, add water to it and cook over medium heat for 10 to 15 minutes before straining out the water. Give the rice a good rinse before placing it back into the pot.
- When the sauce is ready, you’ll know when the oil starts to float on top.
- If you are using mixed vegetables add it to the sauce when it’s 90% ready, you do not want the vegetables to overcook to prevent them from getting too soggy.
- Transfer the sauce to the parboiled rice with enough water to cover the rice and salt to taste.
- Cover and simmer till the water dries up.
- Give the rice a good mix and your Suya Jollof rice is ready to be enjoyed.
