Yam and Egg sauce is one of the breakfast staples in Nigeria. It is easy to whip up and relatively cheap to make. For the yam it could be boiled or fried while the egg sauce is made with eggs, tomatoes, scotch bonnet peppers and onions. Egg sauce is very versatile and can also be eaten with Agege bread or even rice. Here is how to make one of the popular Nigerian breakfast meals, yam and egg sauce.

Ingredients
- 4 medium-sized eggs (800 naira)
- Fresh pepper and tomatoes, chopped (400 naira)
- 1 small onion, chopped (100 naira)
- 1 red bell pepper, chopped (Optional)
- Small-sized Yam ( 1100 naira)
- Sachet of garlic and ginger powder (100 naira)
- 2 seasoning cubes (100 naira)
- Sachet Poweroil Vegetable oil (400 naira)
- Salt to taste.
Preparation
Sauce Preparation
- First, we’ll be making our egg sauce. Place a frying pan on a medium/low heat, add the vegetable oil, and allow it to heat up slightly for about 2-3 minutes, then throw in the chopped onions to fry for a few minutes with the garlic and ginger powder.
- Next, add the chopped peppers and tomatoes and cook for about 4-5 minutes or till oil floats on the sauce, add salt, 1 seasoning cube, curry and thyme.
- Stir thoroughly to combine everything and also prevent the sauce from sticking to the pan
- Break the 4 eggs into a shallow bowl, add the other seasoning cube and a pinch of salt then whisk till everything is well combined
- Add the whisked eggs to sauce and leave for about a minute so that the eggs can set a bit before stirring.
- Stir to scramble egg and throw in the chopped red bell peppers if you are using it.
- Turn off the heat and cover the pan to allow residual heat finish cooking the egg sauce.
Yam Preparation
- You can fry your yam to pair with the egg sauce but we’ll be using boiled yam in this recipe.
- Start by peeling and chopping your yam into sizeable chunks, place them in a bowl and rinse before putting the yam in a pot, add enough water to cover it, add salt and place on medium heat and cook till soft.
- Test it’s doneness by piercing a piece of yam with a fork, if it goes through, then the yam is ready.
- Drain the remaining water from yam and place back on the heat for 1 to 2 minutes so that the water dries up completely and your yam and egg sauce is ready.
