    • 3 cups Flour
    • ¼ cup Sugar
    • ½ teaspoon Salt
    • 2 medium sized Eggs
    • 1 cup Milk
    • 2 cups Water
    • 1 small Onion (chopped)
    • 1 small fresh Scotch bonnet pepper (chopped)
    • ½ cup cooking oil

    Preparation

    • Combine the dry ingredients in a bowl, that is the flour, sugar, and salt.  Mix thoroughly to combine before cracking the eggs into the flour and mixing again.
    • Combine the milk and the water together before pouring it into the flour and egg mixture. Give it a good mix to ensure there is no clumps and you get a smooth runny batter.
    • The next step is to add the chopped onion and pepper. Some persons might prefer to fry the onion and pepper before adding it to batter.
    • If you don’t like raw onions and fresh pepper. Simply put some oil in a pan and lightly toast the pepper and onions, allow to cool before adding it to the pancake batter. Then mix thoroughly.
    • To make the pancakes, you can use oil or butter. Simply drizzle some oil a frying pan and leave to heat up. Scoop a spoon full of the batter into the pan and tilt the pan to spread the batter.
    • Cook on medium to low heat for about 2 minutes until you notice bubbles forming on top of the pancake, flip to the other side to cook for 1-2 minutes and your pancake it ready. Repeat the process till the whole batter is used up.

    Do not over mix the batter so that your pancakes do not become too chewy and tough to eat

    If you decide to fry the onions and pepper before adding it to the batter, ensure it cools completely before introducing it to the pancake batter.

    Preparation

    • Start by blending the fresh tomatoes and scotch bonnet peppers alongside to a smooth paste. In a frying pan add the vegetable oil and allow to heat up before throwing in the chopped onion to fry until translucent.

    • Add the chicken or beef broth into the sauce and, stir constantly to create a smooth sauce.

    • Taste the sauce and season with salt as needed.

    Preparation

    • For some people eating beans usually cause heartburn, bloating and even stomach upset. To prevent that, soak the beans in cool water overnight. If you are pressed for time and cannot soak the beans overnight, you can parboil the beans first before cooking.
    • So firstly, wash your beans after selecting and removing any dirt in the mix, then place the beans in a cooking pot with enough water.

    However, the party jollof rice has a bit more prestige compared to home-cooked Jollof rice. Party jollof rice are usually very authentic in taste, richer and far more delicious. To achieve this, i like to add butter to the rice because the butter gives it a very rich taste and a lush consistency. To also get an inviting sharp red color, i blend a handful of shombo alongside the tomatoes and scotch bonnet peppers.

    Without too much discussion, here’s how to achieve the perfect Nigerian party jollof rice.

    • 4 Cups of Parboiled Rice (2000 naira)
    • Fresh Tomatoes and Ata rodo Peppers (1500 naira)
    • Shombo Peppers (500 naira)
    • 1 Kilo of Frozen Chicken (7000 naira)
    • 2 Sachets of Tomato Paste (500 naira)
    • 2 Big Onions (400 naira)
    • Poweroil Vegetable oil (1500 naira)
    • Sachet of Margarine (700 naira)

    Preparation

    • First blend the peppers, tomatoes and 1 onion to a smooth paste and set aside. Next, wash and season your chicken with half sliced onions, chicken seasoning, grated garlic and ginger, 2 seasoning cubes, 3 bay leaves and some curry and thyme powder. Add enough water and salt to taste then cook the chicken till tender.

    • The water from cooking the chicken will serve as the stock for the rice so make sure to season your chicken properly and add enough water to it.
    • When the chicken is tender, strain the stock and set aside. Then fry the chicken in deep hot oil till they are golden brown and crispy.

    • In a large pot add some vegetable oil, place on medium heat, add half sliced onion into it and let it fry till fragrant.

    • While the stew is frying, parboil your rice for 5-8 minutes with little water on low heat. You can also decide not to parboil and simply wash your rice thoroughly to rid it of starch and set aside. I prefer to parboil my rice but should still be very firm and not soft when i set aside.
    • When the sauce is ready, oil floats to the top, then I’ll add the chicken stock, cover and let it fry for a further 8-10 minutes.
    • Now add the washed rice to the stew and combine thoroughly

    • Ensure the stew is only about a cm over the rice when combined, and add very little water, adding as you go.

    • When the rice is fully combined, add the butter and mix to incorporate.

    • Cover and let the rice cook till it softens. Ensure to stir every now and then with a WOODEN spoon; this prevents clumps and doesn’t break the rice up. Cook on low heat and add little amount of stock or water as you go, be careful not to add too much. Jollof rice needs steam to cook and not water, and will definitely burn a little, this is what gives it the distinctive smokey flavour.
    • When the rice is soft enough, add some sliced onion rings and optionally some sliced tomato and stir.

    • This should be added just a couple of minutes before final doneness. Combine thoroughly and switch off the heat but leave the pot covered so it can cooked the onions and tomato with the residual heat for another minute or two and your Nigerian Party Jollof Rice is ready.

    • 1 Tuber Of medium sized white Yam (1500 naira)

    • Blend the Peppers, Tomatoes, and 1 Onion till smooth and set aside. Also debone the smoked and dry fish.
    • Chop the cow skin into small chunks and remove the head from the dried prawns.

    • Place a big pot on medium heat, and add the palm oil. Allow it to heat up then add 1/2 sliced Onions and sauté till fragrant.

    • When it’s fragrant, add the blended tomato and Pepper mix, garlic and ginger powder, ground crayfish and locust beans. Stir occasionally to prevent burning.

    • When the tomatoes and pepper mix reduces considerably and you can’t taste the sourness of the Tomatoes any more, add the smoked fish, dried prawns, 2 seasoning cubes, cow skin and dried fish, combine and leave to cook for a further 2-3 minutes.

    • Next, slice and peel your Yam, cut into small chunks, rinse, and add to the stew with enough water to cover the yam but not too much so that you don’t end up with a watery porridge. Also add salt to taste.

    • Combine everything thoroughly, and turn the heat down to low, then chop up your overly ripe plantains and add to the mix before you cover the pot and leave to cook for 10 minutes or until the Yam softens. Use 1 or 2 ripe plantains depending on how sweet you want this dish to be.
